At Spice Peaks, we take pride in producing high-quality red chili that’s cultivated with care, harvested at peak ripeness, and sun-dried using traditional methods that bring out its full aroma and color.

Cultivated with Care

Our journey begins in fertile fields across Sri Lanka’s dry zones, where red chili thrives under ample sunshine and well-drained soil. We work closely with experienced local farmers who know exactly when and how to plant for the best results. Natural farming practices and organic inputs are prioritized whenever possible, minimizing chemical use and respecting the environment.

Once the seeds are sown, the plants are carefully tended for several months. Farmers regularly monitor for pests, maintain healthy soil conditions, and ensure the plants receive just the right amount of water. As the vibrant green plants mature, they slowly begin to reveal their fiery red fruit — a signal that harvest season is approaching.

Harvested at Peak Ripeness

Timing is everything when it comes to chili harvesting. We wait until the pods are fully ripe — their deep red color indicating maximum flavor and heat. Each chili is handpicked to avoid damage and ensure only the best pods make it to the next stage.

Harvesting is typically done in the early morning or late afternoon to avoid excessive exposure to the sun during picking. This careful handling helps preserve the quality, aroma, and natural oils of the chili.

Naturally Sun-Dried

Once harvested, the chilies are laid out on large mats or drying trays under the tropical Sri Lankan sun. This age-old method of sun drying is essential for intensifying the flavor and locking in the signature heat.

The chilies are turned regularly to ensure even drying and prevent moisture buildup, which can affect quality. Depending on the weather, this process can take 5–10 days. The result? Deep red, glossy chilies packed with flavor and ready to be ground into powder or crushed into vibrant chili flakes.
