🐖 Sri Lankan Pork Curry (Oura Mas Curry)

Ingredients:

  • 500g pork (with a little fat, cut into bite-sized pieces)

  • 1 onion (sliced)

  • 3 garlic cloves (crushed)

  • 1-inch piece of ginger (grated)

  • 1 sprig curry leaves

  • 1-inch cinnamon stick

  • 1 pandan leaf (optional)

  • 1 tsp turmeric powder

  • 1 tbsp roasted Sri Lankan curry powder

  • 1 tsp red chili powder (adjust to taste)

  • 1 tsp black pepper

  • 1 tbsp vinegar or lime juice

  • 200ml thick coconut milk

  • Salt to taste

  • 1–2 green chilies (optional, for added heat)

Instructions:

  1. Marinate pork with turmeric, curry powder, chili powder, black pepper, salt, and vinegar. Let it rest for 30–60 minutes.

  2. In a pan, heat a little oil and sauté onion, garlic, ginger, curry leaves, pandan leaf, and cinnamon until golden and fragrant.

  3. Add the marinated pork and cook on medium heat until well-browned.

  4. Add a little water, cover, and simmer for 30–40 minutes or until the pork is tender.

  5. Stir in coconut milk and green chilies (if using). Simmer uncovered until the curry thickens and the oil begins to separate.

  6. Taste and adjust salt or spice level as needed.

  7. Serve hot with rice, string hoppers, or freshly baked bread.
