Marinate pork with turmeric, curry powder, chili powder, black pepper, salt, and vinegar. Let it rest for 30–60 minutes.

In a pan, heat a little oil and sauté onion, garlic, ginger, curry leaves, pandan leaf, and cinnamon until golden and fragrant.

Add the marinated pork and cook on medium heat until well-browned.

Add a little water, cover, and simmer for 30–40 minutes or until the pork is tender.

Stir in coconut milk and green chilies (if using). Simmer uncovered until the curry thickens and the oil begins to separate.

Taste and adjust salt or spice level as needed.
